What's Cookin'?

MENTAL STATUS: "Bummed." Yes, I got my contest entry ready and I critiqued my CP's chapter, but I haven't gotten too much further along in my own story. I will have a lot of time today to devote to it, though.

I've been spoiled with the hubby volunteering to work his "grill magic" on our outside barbecue these past few months. But the cooler weather has inspired me to, uh, actually turn on the oven and cook. (I hope it still works.)

A few days ago I got my Food Network newsletter, which featured meatloaf, and I started to think. Mmmm...meatloaf. Nothing says comfort food to me like a big old brick of ground meat in my stomach.

So I dusted off my collection of recipes and pulled out a goody that my mother-in-law gave me.

Tangy Glazed Meatloaf:
1 lb. ground turkey ( I use BEEF)
1/4 c. bread crumbs
1/3 c. milk
1 egg, beaten
1 sm. onion, chopped
Salt and pepper to taste
2 tbsp. catsup

Combine bread crumbs and milk in a bowl. Add turkey, egg, onion, seasonings and catsup. Mix well and pat into a small meatloaf pan. Bake 350 degrees for 40 minutes.

GLAZE:
3 tbsp. brown sugar
1/4 c. catsup
1/4 tsp. nutmeg
1 tsp. dry mustard
Combine glaze ingredients and spoon over meatloaf. Bake additional 20 minutes.


That's what I'm making for dinner tonight with a side of mac&cheese and a vegetable that I have not yet decided on.

Good question... I don't even remembr what I bought when I went grocery shopping on Sunday.

Next to washing dishes, cooking is my least favorite household chore. I only do it because we need to stay alive. :) That's why God created restaurants, you know.

Not sure. Hubby does most of the cooking during the week. Probably some type of chicken.

Isn't it funny how the weather changes your eating habits?

We're having leftovers since it's church night! We have a habit of throwing a lot of food away at the end of the week so I'm only cooking about three days a week lately! I did make some stellar amish bread though! (and some cheese danishes last night that were so easy I could have done them in my sleep!)

I put a roast on to cook all day with potatoes, mushrooms, onions and carrots. I'll add a salad tonight for greens but this is the easiest meal. It cooks low and slow all day and is soooo tender.

Hubby is the "grill master" and we only get his magic every 4 months so I'm left on my own to feed the boys. I'm such a bad mommy cause we've been doing restaurants alot.
