Homemade Spaghetti Sauce! (Just like Mom's)

I don't know about you, but I LOVE homemade spaghetti sauce.
And I'm not even Italian!
Hey, don't get me wrong. I buy jarred sauce when I'm in a pinch, but I really don't like it. (Too much sugar)
I had time so I decided to try this recipe the other day. It comes from Taste of Home magazine, but I tinkered with it. So I'm posting what I used and did. It's delicious!
Homemade Spaghetti Sauce (meatless)

Ingredients:
4 celery stalks, chopped
1 large onion, chopped
1 teaspoon olive oil
2-1/2 cups water, divided
1 can (29 ounces) tomato puree
1 can (28 ounces) diced tomatoes, undrained
3 cans (6 ounces each) tomato paste
1/2 cup minced fresh parsley
5 to 6 garlic cloves, minced
2 teaspoons dried basil
2 teaspoons dried oregano
1 & 1/2 teaspoon sugar
1 teaspoon salt
1/2 teaspoon pepper
Directions: In a Dutch oven, combine the celery, onion, garlic and oil. Cook until onion soft and garlic slightly brown (about 8 min). Add 1 cup water. Bring to a boil. Reduce heat to medium; cook, uncovered, for 10-12 minutes or until vegetables are tender and water is reduced.
Stir in the tomato puree, tomatoes, tomato paste, parsley, Italian seasoning, sugar, salt, pepper and remaining water.
Bring to a boil. Reduce heat; simmer, uncovered, for 45-50 minutes, stirring occasionally.
Yum!

Believe it or not, homemade spaghetti sauce was the first thing my mother taught me how to cook when I was about ten years old. I used to love the preparation. Now I just want quick and easy.
Even tho I'm Italian, I do tend to use jarred sauce. It's just easier. Although when I go to the trouble of making it, it's really good.
Seriously, have I ever told you how much I love you? ;oD Hubby and I are planting a garden this year and roma tomatoes are going to be my friend. We're going to make our own because I hate how sweet the store bought stuff is. We're really long lost sisters, I've decided!
That looks like a perfect recipe to me. I can just hear my hubby saying "meatless"? LOL

I doctor y prego after a several hour simmer and add a ton of vegies. I've been known to thrown in turkey sausage or meatball's. OK I'm getting hungry.
On a side not Samhain passes on my Rom Comedy. Which has totally bummed me out. *Sigh* I guess I will flitter of to different pastures. Maybe try wild rose? Any suggestions would be appreciated! And super congrats again on your novel!!!!
You know...I think that is the EXACT recipe I make when I'm not being lazy and using Prego. I got it from my mom years ago.
