Black Bean Burgers!

I'm not a vegetarian but I could easily be one. EASILY!! If only it wasn't for my meat-loving family bringing me down, that is.
I guess I've been pushing my luck recently with all my veggie meals, because my hubby told me that although he liked this recipe for black bean burgers I made, he was feeling crotchety since this was the second meatless dinner I served him in the past two days.
Ooops.
Anyhew, I thought this recipe I tried was VERY tasty. And the "burgers" really held together nicely, like a real hamburger. Of course, I served it with sweet potato fries to really send my family over the edge. LOL!
Black Bean Burgers
2 cups black beans, drained and rinsed
1 1/2 cups cooked wild rice (I used basmati since I LOVE basmati rice and it's what I had on hand)
1/8 c walnuts (OMITTED since the kiddo is allergic)
1/4 c roasted red pepper
1 med onion (I used 1/2 med red onion)
1 bunch cilantro
3 TBsp chopped basil
2 TBsp FRESH lemon juice
5 cloves garlic, roasted (I sauteed them with the onions for a little bit)
1 TBsp cumin
1 TBsp paprika
1 TBsp olive oil
salt and pepper to taste
Combine all in a food processor and coarsely chop. Shape mixture into patties. Heat olive oil in skillet over high heat. Brown patties on both sides (2 to 3 min). Serve on bun with fixings.
Yum!
Better than a real burger.

Sounds really good, but a lot of work to make. Too bad they weren't appreciated more by the family. Isn't that always the way. We put so much energy into creating something new and it gets rejected by the family. Woe for us creative meal makers.

I'll have to try those. I bet they'd be good (the wrong color, but...) with chickpeas. Like a falafal. :) Glad I checked in; this would be good for tonight. My husband loves anything vegetarian. As long as he can put Frank's Red Hot on it, he's happy.

I could live without meat too. Hubby says a meal is not really a meal if there's no meat. Grrr...

I'm pretty much a vegetarian too but never thought about combining the beans and rice and have it turn out like a burger. Hmmm--my husband would pass for the real thing I think:(
Jessica: I don't think you have to use a food processor. But it makes life easy. Just make sure all your ingredients are minced pretty well and I'm sure you could use a hand masher for the beans. :)
It sounds yummy, but my Honey can't eat beans because of a kidney stone incident, and I refuse to cook two separate meals.
What am i saying? I rarely cook! He cooks or we go out. Hmmm...
But the recipe looks great anyway!

Yum! This looks so much better than the ones I buy! We're trying to eat more better (hee) much to our kids dismay! They like real beef and real fries...I LOVE the sweet potato fries!

mmmm That sounds nummy! I love basmati rice too! So much that we actually buy the 20 lb bag of it from sams. LOL
