A to Z Blog Challenge: K is for...
Maybe this word goes along with the whole exercise kick I've been on but I'm loving this vegetable right now, so I have to share.
So K is for: Kale!
(I know. You're probably thinking, "For real, Jennifer?" Yes, for real.) LOL
Did you know that Kale is the mother of all vegetables? That Kale is the "queen of greens"? That Kale is a nutritional powerhouse? And that Kale is one of THE healthiest vegetables on the planet?
Well, it is. So there.
Which is why I have been eating so much of lately. That, and the fact that I think it's so tasty. :-) In fact, I've been craving it a lot. (And no I'm not pregnant). But I have been on a kale kick lately. My friend even gave me a great soup recipe that I've been having almost daily for lunch. The best part of this recipe is that there are no real measurements. You just kind of dump everything together. Bonus!
Vegetable Soup with Kale:
Saute in a soup pan, one small white onion, lots of garlic, a few sticks of celery chopped, a few sticks of carrots chopped, and a few sticks of parsnips chopped in a small amount of olive oil.
Once veggies are softened and garlic browned, add a quart of organic chicken broth and 4 cups of water to the mix. Add one can diced tomatoes with juice. Add one head of fresh cauliflower (cut up) Add one head of kale (cut in small pieces) Let all come to boil. Then cover and lower heat and simmer until all veggies are tender.
Voila! You can add some salt, if you want. And I add LOTS of fresh pepper. I LOVE this soup. I eat it a lot. And it's sooooooooooooo good for you too!

I did know kale was healthy, but I've never tried it. I guess I'll have to now :)
Um, pass?! I watched a TV show last night and the big thing they were eating was Kale--actually one character was threatening another to make them eat it!!
You know, I can honestly say I don't think I've ever eaten kale, but my sister named her dog kale so that makes up for it. ;)

I've never had kale, at least not that I know of. I'll definitely keep my eye open for it now though, and give it a try ...
I have never eaten Kale and don't even know what it looks like. I guess I'll have to look it up. Isn't the internet wonderful :)
Love the recipe, must try it! I'm a recent convert to Kale, and though it is an acquired taste, it does not deserve the bad taste rap it receives.

I don't know if I've had kale. But I'm always up for trying new foods, especially healthy ones. I'll have to give this one a go!

I have one of those super secret restaurant recipe books...so we like to make Olive garden's Zuppa Toscana..it has Kale!! But we lighten up the recipe with fat free half n half and turkey Italian sausage. Tastes just as good!!

I love most green vegetables. Kale reminds me of mustard greens- my fav!

Mmmm...I love kale! Yum.
I like chard and spinach better, and beet greens. But kale is OK.
I admit it, I've never had kale. In fact, I'm not sure I'd even recognize kale if I saw it. But I'm going to print out this recipe and give it a whirl. We've been making a concentrated effort to eat more veggies. Thanks!
