Super Snow Sunday

MOOD STATUS: "Happy". Running 2.5 miles--comfortably--right now.

I'll keep this short since my kiddo is still home with a two hour delayed school opening.

We had a BLIZZARD Friday to Saturday night and had an end result of over 2 feet of snow. We lost power for a few hours on Saturday. But we were really fortunate to get it back before dinner time on Saturday. There are a lot of houses in our town that are still without.

PS. I love electricity!!!!

We went to a Super Bowl party on Sunday. I honestly watched only five minutes of the game, because I gabbed and ate the entire time. For me, it's all about the Super Bowl FOOD.
I brought a hot spinach and artichoke dip, courtesy of Alton Brown.

(But I tweaked it just a bit)



Hot Spinach & Artichoke dip

Ingredients
1 cup thawed, chopped frozen spinach
1 can artichoke hearts
6 ounces cream cheese
1/4 cup sour cream
1/4 cup mayonnaise
1/3 cup grated Parmesan
1/2 teaspoon red pepper flakes
1/4 teaspoon salt
1 or 2 garlic gloves, minced


Directions
Boil spinach until tender and drain. Discard liquid. Heat cream cheese in microwave for 1 minute or until hot and soft. Stir in rest of ingredients. Place in pie plate and bake at 350 degrees for about 25 minutes.

Serve with tortilla chips.

Super Bowl is definitely about the food! I don't watch the game but I wait for the commercials to come on the internet so I can watch them one by one.

Other than the guy in the dog's shock collar, I didn't think any of them were particularly good this year.

I loved the Punksatawney Polamalu ad and the Dodge Charge ad with the guy promising his wife that he'll do all the things she wants!

We didn't go anywhere and only watched up until halftime. I was working on crits listening to my MP3 until the commercials came on.

Thank you for the dip recipe. I love spinach/artichoke dip! We had brisket at the super bowl party I attended (smoked for ten hours the day before--yum).

You must've gotten all the snow we were supposed to get...plus some. Sorry about that.

We had spinach and artichoke dip too, courtesy of Chili's! Wow, you got lots of snow ... it must be headed our way. They're predicting 6-12 inches Wednesday. But we've had very little this winter, so it'll be nice!

Oh my! 2 feet of snow?! We got 8 inches here, and I thought that was bad. :-) We're supposed to get another 8 inches tomorrow, just in time for my husband to have foot surgery first thing Wed. morning. Hopefully we make it to the hospital! Our family has a history of blizzards and surgeries...long story, but it'll be really weird if it happens again.

I'm headed to the grocery store and I might just buy a frozen artichoke dip since you put me in the mood and I'm short on time. And you're running 2.5 miles a day? I'm impressed. My running is a bit stagnated right now but I'm still force-feeding my feet concrete at least four times a week. I've also started something called the Brazillian butt lift. Yes, you can stop laughing now. It is the sole reason I can barely sit down or stand up for that matter. Ouch.

That's a lot of snow! It's still snowing here and has been since yesterday morning but it's nowhere near a blizzard--and we're used to this in Colorado!
