Friday Favorites!

Hey, all!

Well, as I mentioned on Monday, I have found some great vegetarian recipes. So for my Friday Favorites, I HAVE to share with you this vegan recipe that I absolutely could eat everyday for lunch (and pretty much do eat everyday for lunch).

Sweet Potato and Black Bean Burritos

1tBsp olive oil
1/2 red onion, sliced thin
1 red bell pepper, sliced thin
8oz of organic tempeh, crumbled
1 tsp cumin
1 tBsp chili powder
1 yam or sweet potato, peeled and cut into small cubes
10oz can of fire-roasted diced tomatoes
10 oz can black beans, rinsed and drained
whole wheat flour tortillas
lettuce

** Heat oil in a skillet and add onion and pepper. Cook until softened. Add tempeh and brown slightly. Then add seasonings, tomatoes and potato. Cover and lower heat. Simmer until potato softened about 10 min or so. Then add beans and cook until heated through.

(Of course, I take the vegan out of it and add a little Greek yogurt or sour cream inside before I wrap it up with a little added chopped cilantro too)
YUMMO!!

Two things about this recipe: 1) What is tempeh? Check here. It's a good source of protein. Of course for me, it's kind of...well...nasty. But mixed in with the right foods and seasonings, then it takes quite good. I buy mine at an organic health food store.
And 2) don't cheat and use regular diced tomatoes. Use the FIRE-ROASTED. What a difference. So good!

Mmmm...sounds delicious! I do love black beans and sweet potatoes. I've never tried them together, though. I'll have to give this a try. Er, if I can convince hubs to cook it for me...)

Would have never thought of putting black beans and sweet potatoes together. Although I like them both. And tempeh? Never heard of it. The recipe soumds so good I'm going to try it for sure!

I've had tempeh work out well (tempeh meatloaf) and not so well (tempeh bacon), but once you get the hang of it, it is pretty good! This recipe is similar to one I tried last week (from The Happy Herbivore), a sweet potato topped with black beans, hot sauce, green onions and cilantro. At first I was all, "Sweet potato?" then I was like, "Sweet potato!" ;) Thanks for sharing that recipe, I will have to try it!

Thanks for sharing the recipe. I'll have to give it a try. The fire roasted tomatoes are awesome. They are great in taco salad, chili, and even spaghetti, if you want it to have a bit of a kick. I've never tried tempeh. I've thought about it a few times, but have never given in.

I've been a veggie for years, and have recently toyed with the idea of going vegan -- problem is I love my dairy a bit too much -- yogurt in particular -- so i don't really think it is going to happen anytime soon.
And, FYI, I have never really developed a taste for tempeh :(

I'm not a vegetarian, but that recipe does sound really good! (It also isn't helping that I'm hungry right now. Ha, ha!)
