Happy St Patrick's Day!

Happy Monday and St Patrick's day!

This is what I woke up to! SNOW.
And Thursday is the first day of spring?

Anyhew, even though I do not have one ounce of Irish in me, I did make an Irish meal, Turkey and Cabbage Ragout, this weekend that is not only healthy but YUMMO. (kiddo asked for seconds)

So I thought I'd share the recipe.
I did make it as is, but I bet it would be just as good if you omitted the ground turkey too.



Cabbage and Turkey Ragout

1 lb ground turkey
1/2 large white onion, chopped
6 cloves of garlic, minced
3 med carrots, chopped
2 med celery stalks, chopped
2 med green bell peppers, diced
1 sm green cabbage, chopped
1 28oz can diced tomatoes
3/4c chicken broth
1TBsp red wine vinegar
1 tsp thyme
1tsp basil
1/4 tsp red pepper
salt/pepper

In large soup pot, sauté turkey, onion, garlic, carrots, celery, and peppers until turkey is no longer pink. Add remaining ingredients. Cover and bring to boil. Simmer about 15 min or until veggies are tender. Serve over whole wheat wide noodles. (I did not serve with noodles, just as is)

Delicious!!!!

The kiddo is off from school today so I taught her how to make pancakes. Later, we'll be making cookies. :)

I have Irish in my heritage from my mom's side. I'm making Bailey's Irish Cream French toast for dinner tonight! Bailey's is pretty much good in everything!

We got snow this morning too. Just a covering, though. March is always like this: freezing at night, 40s or 50s during the day, potential for snow. But soon it will be April!

No Irish in me. St. Patty's seems to be a much bigger deal down here in the US than where I live in Canada, but happily, I'm currently in sunny Florida, so you're pic of snow made me feel extra gleeful that I have one more week before I have to go home to more of the white stuff, 'cause something tells me it'll be around long past the 21st. ;)

Oh that looks cold out there! The ragout sounds good. Leftovers would be great on such a snowy day too!

Well, now. That snow was a St. Patrick's day surprise! Your storm missed us, but we can feel it in the dampness in the air in New England. Let's hope real spring comes soon!

Talked to my Dad in Cape May Court House this afternoon. He said they got about 11 inches. I hated to tell him that the inch of snow we got out of this system melted by lunchtime, and that it had gotten up to nearly 50 degrees. Sending warmer weather your way! :)
